Knife Sharpening

How We Sharpen:
We use the Tormek T8, the best available water-cooled sharpening system.
This method is slow, precise, and gentle on your steel, making your knives last longer.
The Process
1. Assessment & Cleaning: We inspect every blade for chips, bent tips, or profile issues. We clean the blade to remove any contaminants.
2. Precision Angle Setting: We match the exact bevel angle of your specific knife. This removes the guesswork of freehand sharpening and ensures a perfectly consistent edge from heel to tip.
3. Water-Cooled Sharpening Stones: The blade is sharpened on a slow-rotating stone that runs through a continuous water bath. This cold sharpening method ensures the steel never overheats.
4. Leather Wheel Honing Once the new edge is established, we move to a leather honing wheel. Using a fine diamond compound, we deburr and polish the edge, resulting in a razor-sharp blade.
Why the Tormek T8 System?
No Overheating: Belt sanders or dry grinders generate immense friction and heat. This can ruin the heat treatment (temper) of your knife, making the steel soft and unable to hold an edge. Our water-cooled system keeps the steel at room temperature, preserving the factory hardness.
Minimal Metal Removal: Because we sharpen slowly and accurately, we only remove the absolute minimum amount of steel necessary to restore the edge. Your knife will last years longer compared to aggressive dry grinding methods.
Consistency: The jig-based system and our technique guarantees that the angle is maintained perfectly on every stroke. This creates a stronger, more durable edge that performs better and stays sharp longer.
